Pizza as health food? That's John Ordway's pitch at Doylestown's new pizzeria. The rectangular thin-crust pizza, which starts with low-calorie Italian flour and is decorated with organic vegetables and meats, can be ordered by the inch. Then indulge in a dessert "pie", pizza topped with marscarpone cheese and fruit, or chocolate and Nutella. On Saturday and Sunday, forgo cold pizza at breakfast for one of Ordway's egg-topped pies.

Rectangular Pizza is the Shape of Jules Thin Crust
Who says fast food can't taste good and be healthful at the same time? Just ask John Ordway, owner of Jules Thin Crust in Doylestown, which officially opened its flagship restaurant June 1.
Ordway, born in Dublin, Ireland and living in the United States since 1985, says Jules Thin Crust was born out of frustration over food choices.
"As a father of 2, where can you go for good food in a fast environment that's healthy for you? You can go to a nice restaurant and commit an hour and a half of your time, but if you're on the run and want something good and healthy, in a nice environment, what are your choices?"
Forget the traditional, ubiquitous pizza shape, Jules Thin Crust is rectangular and served on thin wooden boards, designed by Ordway, that mimic the pizza's shape because, "I hate paper plates," he adds.
These crispy, thin, crust pizzas are made with wholesome, organic or fresh ingredients. The tomato sauce is made fresh each morning by Ordway's staff. One of the crust's ingredients is "00" (zero-zero) flour, a light, very refined flour from Naples, Italy that is not only great for baking but has half the calories of standard pizza flour.
"The 00 imparts the crust not only with a certain texture but its crispness as well," says Ordway. Customers can choose from 7 different meat combinations, 15 different vegetable combinations, 4 different cheese pizzas and 4 different thin crust dessert combinations. On Saturday and Sunday only, in addition to the regular menu selections, a brunch pie is offered. It is made with fresh organic eggs, bacon, red pepper, mozzarella, scallions and portabella mushrooms. Totally organic salads made with ingredients from Buckingham's Blue Moon Acres round out the menu.
In his late 30s, the tall, thin, Soft-spoken Ordway, who lives in Tinicum with his wife, Jan, and two daughters, Julia and Isabella, spent a year working on an idea for a light, healthful pizza. The enterprise is named after Ordway's 8-year-old daughter, Julia. Ordway, whose background is in advertising, chose pizza because, "it can be healthy and everyone likes pizza. It's a universal food."
By mid-August, a web site will be available to allow customers to order online and offer suggestions on different types of pizzas. "New ones that I haven't even heard of," says Ordway.
Comfortable inside and outside dining areas are available where customers can BYOB.
In a hurry? Jules Thin Crust also offers a "Fly-By" service. Call ahead for pizza and the pizza is delivered to your car when you pull up.
While he has no plans to franchise Jules Thin Crust, Ordway is already looking for the next location and eventually would like to open 30 Jules Thin Crusts in the tri-state area.
"I'm trying to be the Starbucks of the pizza industry. With Starbucks you get a clean environment, a product that's going to be consistent and it's going to be good. The consumer pays for that because people are willing to pay for quality."
